One of my favorite things to do with my daughter is going blackberry picking. There’s something so refreshing about being able to bring home berries from your back yard. This salad is loaded with antioxidants and full of all our daily greens and is one of those simple healthy recipes. I like to mix up my own dressing with extra virgin olive oil,lemon juice, minced garlic and your favorite herbs. Store bought dressing is also great. I like organic roasted herb & garlic. If your not a fan of spinach and arugula,try using romaine or a spring mix.
- 3 cups spinach
- 1 cup arugula
- 1/2 cup cucumber
- 1 boiled egg (optional)
- 1-2 oz cheese of your choice – asiago is great
- 1/2 cup blackberries
If you prefer no egg try almond slivers. To make it more of a meal a fresh piece of halibut is perfect!!
