Greek Style Chicken Burgers

Everything tzatziki this summer!!!  I recently made chicken souvlaki and my family loved it. It’s funny because that’s a dish I rarely make, even though it’s super easy and inexpensive. Think about it  5 main ingredients and you have souvlaki!! Since I was all about the tzatziki sauce I thought about other ways of making some good greek style meals. This is a great healthy meal for the whole family.

All you need for greek style chicken burgers

Marinade for chicken 4-6 breast
  • 1/4 cup extra virgin olive oil
  • Lemon juice (1 lemon)
  • 1/2 tsp lemon zest
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 3 gloves fresh garlic minced
  • 2 tsp fresh organic oregano
  • 1 tsp fresh organic thyme

Whisk in the extra virgin olive oil gradually. Pour marinade over chicken breast put in refrigerator for about 1 hour or more. Cook chicken in non stick pan until chicken is cooked thoroughly.

Ingredients to put the chicken burger together
  • Whole wheat burger buns
  • Tzatziki sauce spread evenly on one side of bun
  • Thinly sliced tomatoes
  • Thinly sliced cucumber
  • Monterey Jack cheese sliced or feta cheese
  • Romaine lettuce to top it off
  • Any kind of olives on the side for garnish

I like to place the buns on a oven tray top one side with the greek marinated chicken and lay the cheese on top. Place in the oven until cheese is melted. Once out of oven spread tzatziki on the bun and layer it with the cucumbers, tomatoes, and romaine lettuce. Enjoy!!!
